Email recipients will show up grayed out if they do not have an email address, or they don't have the email address type selected in the email profile.

Highlight the recipient, right click and choose Open Participant Record to check the email address.

If the email profile has to be edited to include the email address type on the recipient's record, right click in the Email profile drop down and choose Edit Profile.
