You will need to parse the name into columns for the first, middle (if applicable), and last name fields in Excel previous to importing in order to map to a value of "Constituent Field" for the record type within the profile. The value type is where you will select the specific first, middle, or last name field to import the data.
If the full constituent name exists in the same field of a column, the entire contents of the field will go to the same field it is mapped to import into. It will not be parsed via the import process.
