Answer:
Starting in IOM version 2.6, virtually all the volunteer fields can be imported. Please update to the latest version of IOM.
The majority of the volunteer categories have their own Record Type, and the fields map directly to their specified field.
The Volunteer Types uses the Record Type Volunteer Types
The Emergency Contact and Vehicle Information use the Record Type Volunteer
After mapping the fields, go to Volunteer in the left side navigation pane. The last box contains the fields for matching to existing volunteer details.

For each category of volunteer data, use the dropdown to select whether to always add a new record or to try and match to an existing record based on one or more selected parameters. If a matching type is found, it will be updated with the imported data. If a matching type is not found, a new one will be created.
