Answer:
Starting in IOM version 2.6, virtually all the volunteer fields can be imported. Please update to the latest version of IOM.
The majority of the volunteer categories have their own Record Type, and the fields map directly to their specified field.
The Volunteer Mandate Info uses the Record Type Volunteer Mandate
